Structure

 

Sodium bicarbonate has many properties and functions.  It is a white powder or crystals, slightly alkaline taste,
soluble in water, slightly insoluble in alcohol, noncombustible, and mildly abrasive.  The release of  carbon dioxide
when heated or when reacted with a weak acid makes sodium bicarbonate.  It is a key ingredient in food leavening
as well as in the manufacture of effervescent salts and beverages.  As a buffer in water treatment , sodium bicarbonate
can react as an acid or a base.  Health and beauty applications utilize the product's mild abrasivity and its ability
to reduce odors chemically by neutralizing the acid by-products of bacteria.
