Cinnamon


Ceylon cinnamon comes from the dried bark of cultivated trees of Cinnamonum zeylanicum Nees, Lauraceae, which is found in Ceylon, Sumatra, Borneo and cultivated in tropical Africa, America and Asia.  Cinnamon contains cinnamic aldehyde (cinnamldehyde), tannin, 1-2% volatile oil and sugar.  Cinnamaldehyde can be found in Chinese and Ceylon cinnamon oils, or can be prepared by the condensation of benzaldehyde and acetaldehyde.  Cinnamaldehyde is used in perfumes and as a flavoring agent.
 
 
 
 
 

Cinnamaldehyde: 3-phenyl-2-propenal.  C9H8O, MW = 132.15.  Yellowish oily liquid with a strong odor of cinnamon.   Bp = 246oC.
